"Pork Koji-Buta" refers to naturally raised Japanese-style pork without the use of growth hormones.
This part consists of both long, bacon-like strips and round slices. It is highly popular in hot pot and grill restaurants and can be used for a wide range of dishes, such as skewering it with enoki mushrooms, marinating it in a spicy sauce, or using it in shabu-shabu and barbecue.
