This is the tender bone attached to the white meat near the hind leg of the pig. It's commonly used to make "Naem Sii Krong" (fermented pork ribs), soups, or boiled pork bones.
You can chew and eat the entire piece. When boiled until tender, one pig typically has two tender bones, and they weigh approximately 4-6 grams.
